The Chi Chi is, simply, a Piña Colada made with vodka instead of rum. Cream of coconut and pineapple juice carry the drink; vodka stands back and lets the tropical flavours run the show.

The Piña Colada's coconut and pineapple are doing most of the talking already. The Chi Chi takes that to its conclusion — swap the rum for vodka, and the drink becomes purely about the fruit, smooth and dessert-like.

Like any blended colada, the Chi Chi lives or dies on texture: thick, smooth, and cold, never icy or thin. Plenty of ice, a good cream of coconut — not coconut milk — and a proper blend are what make it.

Cream of Coconut, Not Coconut Milk
