Rum Blended Strong Summer

The Test Pilot is one of Donn Beach's jet-age tiki creations, dated by historians to around 1941. Like every Don the Beachcomber recipe, it was deliberately encrypted at the bar — Donn's staff worked from numbered pre-batched mixes so no one could copy the formula — and it survives today thanks to the reconstruction work of Jeff "Beachbum" Berry. Built on two rums, falernum, and Cointreau, it carries Donn's signature trick: a whisper of Angostura bitters and Pernod that haunts the whole drink.

Named for the men flying experimental aircraft in the 1940s — and built to be drunk with the same disregard for caution.

History

Donn Beach (born Ernest Gantt) opened Don the Beachcomber in Hollywood in the 1930s and effectively invented the tiki cocktail. To protect his recipes he gave his pre-mixed ingredients code numbers, so even his own bartenders didn't know the full formulas. As a result, drinks like the Test Pilot were lost for decades until Jeff Berry painstakingly reconstructed them from old notes, interviews, and surviving staff — publishing the results in Beachbum Berry's Grog Log and Beachbum Berry Remixed.

The name belongs to the aviation-mad 1940s, when test pilots pushing experimental aircraft were the era's daredevil heroes. The drink is closely related to the later Jet Pilot — both share Donn's DNA — but the Test Pilot is the earlier formula, and the two are easy to confuse on a menu.

The Spec

Two rums form the base — a dark Jamaican for funk and a light Puerto Rican for lift — with lime and falernum for the tiki spine and Cointreau for brightness. Then come the two drops that make it Donn's: Angostura and Pernod.

Two rums, two jobs

The split is the point. A funky dark Jamaican rum gives the drink its backbone and hogo; a clean light Puerto Rican rum keeps it from turning heavy. Substituting a single rum for both flattens it — this is a blended-rum drink by design, like most of Donn's work.

Donn's secret handshake: Angostura + Pernod

Berry has noted that the pairing of a dash of Angostura with a tiny hit of Pernod (or absinthe) was one of Donn Beach's recurring secret weapons. It's barely there — six drops of Pernod — but it gives the Test Pilot an anise-and-spice ghost that you notice the moment it's missing.

Falernum

Falernum is a Caribbean syrup-liqueur of lime, ginger, almond, and clove — the secret sugar of countless tiki drinks. It does more here than sweeten; it layers spice into the rum. A good falernum is worth seeking out.
